Synesso, Inc is the American maker of "temperature stable" machines. Founded by Mark Barnett who was formerly the research/designer at Trueh. These fine machines offer perfect temperature control on a brew head basis. This means your first pull is spot on. There are no temperature fluctuations to ruin your espresso. It also means you can offer different espressos that need different brew head temps. While you do find totally hi-tech pid temp controls the brew button is manually controlled as is the classic steam wands. The Synesso machines are definitely for those who appreciate and understand the artistry required for exceptional espresso quality.

Is it better to add cream when you first get your hot coffee? Will it cool faster or slower? I found the math answer here at DC Physics. Big formula to say this:
The cream and coffee have a certain total mass which is losing energy to the surrounds, thus lowering the temperature. The temperature of the mixture will be given by the total energy remaining. So, the critical factor is not when they are mixed but how fast energy is being lost to heating the environment in each case. Examine the various contributions (evaporation, black body radiation, conduction, convection)... in each case energy is transfered faster from a hotter object than from a colder object. So, by adding cream/sugar at the beginning the mixture achieves a lower temperature immediately, which means a slower rate of transfering energy to the surrounding environment. Losing energy slower means the average temperature of the combined coffee/cream/sugar will be higher.

Hate to speak ill of fellow coffee people but What Were They Thinking? Isn't it very well known nuts can be hazardous and even deadly? Peanuts aren't even allowed on airplanes anymore.
Rest assured we do not add nuts to any of our coffees.

Oklahoma City-based Neighbors Coffee is recalling nearly 20,000 pounds of nut-flavored whole-bean coffee because it contains undeclared almonds, hazelnuts, peanuts and pecans. People with allergies can suffer serious and life-threatening reactions to the nuts.

Coffee 'tastes better as s**t'

A Canadian scientist claims to have proven that the world's most expensive coffee really does taste better because the beans it is produced from have been eaten and defecated by a wild cat.

The Montreal Gazette says Massimo Marcone used taste machines and humans to establish that there really is a difference in taste between Kopi Luwak beans that have and have not passed through a civet cat's digestive system.


With all due respect, what is the scientific method here? My understanding, of many years, is that the defecated bean is of high quality because the cat only picks the ripest cherries. The cat preselects the best tasting coffees. The Kopi Luwak coffee cat is a gourmand.

It's being reported all over in a study of 16,000 people that coffee dramatically reduces liver disease. It just gets better all the time.
Certainly compliments my lifestyle. Coffee in the mornings and beer and wine at night. A heavy health regimen.

Over the past few years we have supplied small amounts of green coffee to the Vanderbilt Coffee study. Word leaked out early from the self described "lab rats" of the beneficial effects they were finding coffee provides us. Holly Edwards recently wrote about this in the Tennessean: "

  • It's an antioxidant, absorbing destructive molecules linked to heart disease and cancer.
  • By combating depression and elevating mood, coffee can reduce the risk of suicide and prevent drug and alcohol addiction relapse.
  • Its ability to increase blood flow to the brain has been linked to prevention of degenerative brain diseases such as Parkinson's disease and Alzheimer's disease.
  • It can prevent diabetes by enhancing the liver's ability to metabolize sugar.
  • Smokers who drink it regularly have a lower risk of developing bladder cancer than smokers who are not coffee drinkers."

Lighter roasted coffees provide more antioxidants than darker roasts. Perfectly logical since the lighter roasts maintain/contain more of the original organic compounds as opposed to the darker roasts which contain more and more carbon.
